Outrageous Potatoes

  • 2 -3 lbs potatoes
  • 1 tablespoon salt
  • 1 12 cups butter or 1 12 cups margarine
  • 1 cup sour cream, save spoonful for garnish
  • 6 ounces cheddar cheese
  • 4 pieces bacon
  • 14 cup chives

Directions

    New potatoes or baby reds are good for this recipe.

    Cut potatoes into large bite size pieces.

    Rinse and boil in cold water with a nice dash of salt until soft but not falling apart.

    Check with fork, if it falls apart it is too done if the fork goes in easy and the potato looks lighter than it is done.

    do not rinse but strain potatoes to remove all water.

    Put in a bowl and add butter, sour cream, chives , cheese and bacon bits.

    Fold without breaking potatoes .

    garnish with a spoonful of sour cream on top and chopped chives.

    If you do not like chives substitute parsley.
