Ingredients

  • 1 lb. beef stew meat (do not brown)
  • 1 c. carrots
  • 1/2 c. celery, but in 1-inch pieces
  • 3 medium potatoes - cut in chunks
  • 1 medium onion, cut in wedges
  • salt and pepper to taste
  • 3 Tbsp. tapioca (dry)
  • 1 Tbsp sugar
  • 12 oz. V8 Juice

Directions

    Put all ingredients in dutch oven or roaster.

    Bake covered at 250 degrees for 5-6 hours.

    Check and add more V8 juice if stew looks dry.
