- 1 lb. beef stew meat (do not brown)
- 1 c. carrots
- 1/2 c. celery, but in 1-inch pieces
- 3 medium potatoes - cut in chunks
- 1 medium onion, cut in wedges
- salt and pepper to taste
- 3 Tbsp. tapioca (dry)
- 1 Tbsp sugar
- 12 oz. V8 Juice
Directions

1Put all ingredients in dutch oven or roaster.

2Bake covered at 250 degrees for 5-6 hours.

3Check and add more V8 juice if stew looks dry.
