  • 1 (3 1/2 lb.) chicken, cut up
  • 1 c. low-fat buttermilk
  • 1 clove garlic
  • 1 1/2 c. (3 oz. pkg.) herbed stuffing mix
  • 2 tsp. vegetable oil
  • 1/4 tsp. black pepper

    Remove skin from chicken; coat 13 x 9-inch baking dish with nonstick spray.

    Combine chicken and buttermilk in food storage bag; push out all air and seal.

    Whirl garlic in food processor; add stuffing mix, oil and pepper.

    Whirl; pour into baking dish. Shake off excess buttermilk from chicken and roll in stuffing mix; arrange in baking dish.

    Bake at 375° for 35 minutes or until internal temperature registers 165°.
