- 2 1/2 to 3 lb. chicken, cut up
- 1/4 c. shortening
- 1/4 c. butter or margarine
- 1/2 c. all-purpose flour*
- 1 egg, beaten
- 1 tsp. salt
- 1 tsp. paprika
- 1/4 tsp. pepper
Directions

1Heat oven to 425°.

2Wash chicken and pat dry.

3In oven melt shortening and butter in a 13 x 9 x 2-inch baking pan.

4Mix flour, salt, paprika and pepper.

5Coat chicken in egg; then roll into flour mixture.

6Place chicken, skin side down in melted shortening. Cook, uncovered, for 30 minutes.

7Turn chicken and cook 30 minutes longer or until thickest pieces are done.
