- 1 medium eggplant, cut in thick slices
- 6 Tbsp. creamy Italian dressing
- 6 Tbsp. grated Romano cheese
- 1/2 c. Italian bread crumbs
- salt and pepper
Directions

1Soak eggplant in cold water for 20 minutes.

2Drain and blot dry.

4Press in cheese; then in bread crumbs, coating both sides.
