  • 2 Tbsp. grated Parmesan cheese
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 eggplant (3/4 lb.)
  • 1/4 c. mayonnaise

    Combine bread crumbs, cheese, salt and pepper.

    Peel eggplant, slice 1/4-inch thick.

    Brush both sides of eggplant with mayonnaise.
