- 2 lb. fish fillets (sole or haddock)
- 1/2 c. buttermilk
- 2 tsp. salt
- 1/8 tsp. pepper
- 1/2 tsp. dried leaf thyme
- 1 c. fine dry bread crumbs
- 2 Tbsp. finely chopped parsley
- 2 Tbsp. cooking oil
Directions

1Separate fillets.

2Heat oven to 500°.

3Oil a 13 x 9 x 2-inch glass baking dish.

4Dip fish in combination of buttermilk, salt, pepper and thyme, then in a mixture of crumbs and parsley to coat both sides.

5Lay the fillets in prepared baking dish in a single layer if possible.

6Drizzle with cooking oil.

7Bake 15 to 20 minutes or until fish is golden and flakes easily with a fork.

8Do not turn.

9Serve immediately.
