- 3 to 4 c. cut up vegetables (zucchini sticks, broccoli, cauliflower)
- 1 c. seasoned dry bread crumbs
- 1 Tbsp. vegetable oil
- 1/4 c. grated Parmesan
- 1 egg
- 1 Tbsp. water
Directions

1In a small bowl combine bread crumbs and oil, then add Parmesan.

2In a different small bowl, combine egg and water.

3Dip vegetables in egg, then crumb mixture.

4Place on cookie sheet. Bake at 375° for 20 to 25 minutes until crust is crisp.
