- 3 medium potatoes
- 4 c. water
- 1/2 c. frozen egg substitute, thawed
- 1/2 c. skim milk
- 1/2 tsp. dried whole thyme
- 1/4 tsp. garlic powder
- 1/4 tsp. ground pepper
- 1/4 tsp. salt
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 1/2 tsp. paprika
Directions

1Peel and shred potatoes.

2Transfer to a bowl and cover with water.

3Let stand 5 minutes.

4Remove 1/4 cup of water from potatoes.

5Place in a small saucepan with milk.

6Cook just until hot.

7Remove from heat and set aside.

8Combine egg substitute, thyme, garlic powder, salt and pepper.

9Beat well.

10Gradually add milk mixture, beating constantly.

11Drain potatoes and press out excess liquid with paper towels.
