- 4 (6-ounce) halibut fillets
- Cooking spray
- 1/4 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- 1 (1-ounce) slice white bread
- 1 tablespoon chopped fresh parsley
- 1 1/2 teaspoons chopped fresh chives
- 1 tablespoon butter, melted
- Lemon wedges

1Preheat oven to 425°.

2Coat fillets with cooking spray; sprinkle with salt and pepper. Place fillets on a foil-lined baking sheet.

3Place bread in a blender or food processor; pulse 5 times or until coarse crumbs measure 1/2 cup.

4Combine breadcrumbs, parsley, chives, and 1 1/2 teaspoons butter in a small bowl; toss well. Spoon breadcrumb mixture on top of fillets, pressing down gently. Drizzle remaining butter over breadcrumb mixture.

5Bake at 425° for 8 to 10 minutes or until fish flakes easily when tested with a fork. Serve with lemon wedges.
