- 2 large red peppers
- 2 large yellow peppers
- 2 large green peppers
- 3 Tbsp. olive oil
- 1/2 tsp. oregano leaves, dried
- 1/2 tsp. cracked pepper
- 1/2 tsp. salt
Directions

1Preheat oven to 400°.

2Cut each pepper into quarters.

3Remove the seeds. Place in large roasting pan. Add olive oil, oregano, salt and pepper. Toss mixture to coat well.

4Arrange peppers in one layer. Roast 25 minutes or until tender, stirring occasionally.

5(Peppers can be cut into 8 pieces each.)
