- 2 whole Ripe Plantains

11. Preheat oven to 400 F.

22. Use a paring knife to make a slit in the peel down the length of the ripe plantain, don't cut through the plantain.

33. Wrap individual plantains (with the peel still on) in aluminum foil

44. Roast in the hot oven for 35 to 40 minutes, until the plantain is tender, but not mushy.

55. Remove the plantains from the foil and from their peels.
