  • 1 1/4 cups crackers crushed
  • 1 each eggs slightly beaten
  • 2 tablespoons parsley leaves snipped
  • 2 tablespoons scallions, spring or green onions sliced
  • 2 tablespoons milk
  • 18 teaspoon black pepper
  • 18 teaspoon worcestershire sauce
  • 16 ounces salmon drained and flaked
  • 1 cup cheddar cheese, very old, sharp shredded
  • 1 tablespoon butter

Directions

    Combine 3/4 cup cracker crumbs, egg, parsley, onion, milk, pepper and worcestershire sauce.

    Add salmon and cheese; mix.

    Shape into 4 patties.

    Mix butter with remaining crumbs and coat patties with mixture.

    Place on ungreased baking sheet.

    Bake at 400F (200C).

    for 10 minutes.
