  • 2 1/2 lb. stew beef
  • 2 onions, sliced
  • 1 bunch celery
  • 6 carrots
  • 4 potatoes, diced
  • 1 Tbsp. salt
  • 1 Tbsp. sugar
  • 4 Tbsp. tapioca
  • 3 c. tomato juice
  • pepper, to taste

Directions

    Combine beef, onions, celery and carrots in a large casserole dish.

    Mix salt, sugar, tapioca, tomato juice and pepper.

    Pour over meat mixture.

    Add diced potatoes after 2 hours cooking. Total cook time is 4 to 5 hours at 250°.
