Overnight Fruit Cake

- 1/2 lb. butter
- 1/2 lb. oleo
- 1 lb. light brown sugar
- 6 eggs, separated
- 4 c. plain flour
- 1 lb. red candied cherries
- 1 lb. green candied pineapple
- 4 c. pecan pieces
- 1 tsp. baking powder
- 1 1/2 oz. lemon extract
Directions

1Cream butter and sugar.

2Add egg yolks, then 3 cups flour with baking powder.

3Take 1 cup of flour and mix with nuts and fruit. Add this and extract to rest of batter.

4Fold in beaten egg whites.

5Grease a tube pan.

6Pour in mixture and let set in refrigerator overnight.

7Preheat oven to 250°.

8Bake 3 1/2 hours.
