- 2 1/2 lb. small red potatoes
- 1 c. prepared, low-fat lemon dill mustard dressing, divided
- 1 1/2 tsp. salt
- 1/4 tsp. ground black pepper
- 1 Tbsp. chopped fresh dill
Directions

1In saucepan over medium-high heat, bring potatoes and enough salted water to cover to a boil for 10 minutes; drain.

2In a bowl, combine potatoes with 3/4 cup dressing, salt and pepper.

3Cover and chill 3 hours or overnight.

4Heat oven to 350°; arrange potatoes in a single layer on baking sheet coated with buttered flavored cooking spray.

5Bake 25 minutes, stirring frequently. Drizzle with remaining dressing; bake 5 minutes more.

6Toss with dill just before serving.
