  • 1 c. chopped celery
  • 1 c. chopped onions
  • 1/2 c. shortening
  • 1/2 c. dry bread crumbs
  • 1 tsp. sage
  • 2 Tbsp. chopped parsley
  • 2 pt. fresh or frozen oysters with liquid
  • 2 tsp. poultry seasoning
  • 4 eggs, beaten

Directions

    Cook celery and onion in shortening until golden.

    Add crumbs and parsley, mixing thoroughly.

    Add oysters, seasonings, and eggs.

    Add small amount of stock if oyster liquid does not moisten stuffing enough.

    Place in buttered casserole, cover and bake at 325° for 30 minutes.
