- 2 Tbsp. oil
- 2 Tbsp. flour
- 1 large onion, chopped
- 1/3 c. onion tops
- 2 Tbsp. parsley
- 1 pt. oysters (with water)
- angel hair spaghetti
- salt and pepper
Directions

1Heat oil and brown flour to make roux. Add finely chopped onion and onion tops. Cook until onions begin to melt. Add 1/2 of water; cover and cook 10 minutes or until onions are soft. Add oysters, parsley, salt and pepper; cook and add remaining water or more if you like lots of juice. Add spaghetti and cook 3 to 5 minutes. Serve.
