  • 12 cup cream
  • 14 cup sour cream
  • 1 small onion, very finely chopped
  • 14 teaspoon salt
  • 18 teaspoon cayenne pepper
  • 24 vol-au-vent cases, cooked & cooled
  • 24 oysters
  • black caviar or red caviar, only a small jar (to garnish)
  • snipped chives, to garnish (optional)

Directions

    Combine the creams and whip until thick.

    Fold in the onion and seasonings.

    Spoon mix into cold pre-baked vol-au-vent cases and ganish each with an oyster and caviar.

    Finish with a tiny amount of snipped chives if using.
