  • 4 DOZ OYSTERS
  • 4 STALKS CELERY
  • 1 BUNCH GREEN ONIONS
  • 3 CLOVES GARLIC
  • 1 1/4 CUPS BUTTER
  • 1/2 TS ANISE
  • 4 TBL PARSLEY
  • 2 CUPS SPINACH
  • 2 TS SALT
  • 1/8 TS CAYENNE
  • 1 TS LEMON JUICE
  • 3 TBL WORCESTERSHIRE
  • 2 TBL ANCHOVY PASTE
  • 1 CUP BREAD CRUMBS
  • SPRINKLE PARMESAN CHEESE

    Preheat oven to 350. Saute celery, onion, and garlic in butter for 5 minutes. Squeeze moisture from spinach and add to sauteed mixture. Add remaining ingredients (except bread crumbs) and cook until soft. Mix well using a processor or blender if available. Drain oysters. Place into oyster shell. Add a tablespoon or so of the mixture on top of each oyster. Sprinkle with breadcrumbs and Parmesan cheese. Bake 10 minutes or so.
