- 4 DOZ OYSTERS
- 4 STALKS CELERY
- 1 BUNCH GREEN ONIONS
- 3 CLOVES GARLIC
- 1 1/4 CUPS BUTTER
- 1/2 TS ANISE
- 4 TBL PARSLEY
- 2 CUPS SPINACH
- 2 TS SALT
- 1/8 TS CAYENNE
- 1 TS LEMON JUICE
- 3 TBL WORCESTERSHIRE
- 2 TBL ANCHOVY PASTE
- 1 CUP BREAD CRUMBS
- SPRINKLE PARMESAN CHEESE

1Preheat oven to 350. Saute celery, onion, and garlic in butter for 5 minutes. Squeeze moisture from spinach and add to sauteed mixture. Add remaining ingredients (except bread crumbs) and cook until soft. Mix well using a processor or blender if available. Drain oysters. Place into oyster shell. Add a tablespoon or so of the mixture on top of each oyster. Sprinkle with breadcrumbs and Parmesan cheese. Bake 10 minutes or so.
