- 1 (10 oz.) pkg. frozen (unsalted) chopped spinach
- 2 cans or 2 pkg. fresh oysters
- 2 Tbsp. chopped onion
- 2 Tbsp. chopped parsley
- 2 Tbsp. melted butter
- 1/2 tsp. salt
- several drops bottled hot pepper sauce
- 1/4 c. fine dry bread crumbs
- 1 Tbsp. melted butter
Directions

1Cook spinach according to directions on package. Drain well. Press out excess water and set aside.

2Wash oysters and arrange in muffin pan that has been lined with foil baking cups.

3Stir together cooked spinach, chopped onion, parsley, 2 tablespoons melted butter, salt and hot pepper sauce.

4Top each oyster in cup with 1 tablespoon of spinach mixture.
