- 25 Blue Point Oysters, raw

1Be sure to start with raw unshucked oysters.

2Heat your water bath to 85 C / 185F

3Line sous-vide pouch with aluminum foil so the oyster shell doesn't pierce the pouch.

4Vacuum seal.

5Heat in the water bath for 4-5 minutes.

6Remove oysters from the pouch and serve with seasonings of your choice.

7I used salt and lemon.

8Some like Tabasco as well.
