Ingredients
- 4 chicken breast halves, skinned and boned
- 1 tsp. paprika
- 1/4 tsp. pepper
- 1 tsp. salt (optional)
- 3/4 lb. sweet Italian sausage
- 16 oz. can whole tomatoes
- 2 cans chicken broth
- 1/2 tsp. turmeric
- 10 mussels, cleaned and steamed (optional)
- 2 c. uncooked rice
- 1 large onion, cut in wedges
- 2 garlic cloves, minced
- 1 lb. medium shrimp, peeled, deveined and cooked
- 1 green bell pepper, cut into strips
Directions

1Cut chicken breast into 1/2 inch strips.

2Combine paprika, salt and pepper in small bowl.

3Add chicken and stir until completely coated with seasonings.

4Cut sausage into 1/4 inch pieces.

5Remove casings.

6Add enough water to chicken broth to make 3 3/4 cups. Bring to boil in 12-inch skillet.

7Stir in rice, onion, garlic, turmeric, chicken, sausage and tomatoes.

8Cover tightly and simmer 20 minutes.

9Remove from heat.

10Stir in shrimp and green pepper. Add mussels on top.

11Let stand covered until all liquid is absorbed, about 5 minutes.

12Makes 10 servings.
