- 1 large onion, chopped (1 c.)
- 1 Tbsp. olive oil
- 1 tsp. minced garlic
- 1 1/2 c. chicken broth
- 1/2 tsp. ground turmeric
- 1/4 tsp. dried thyme
- 1 c. uncooked converted white rice
- 4 oz. ham, cut in small chunks (3/4 c.)
- 1 c. frozen green peas
- 1 (4 oz.) jar pimiento, drained and cut in strips
- 8 oz. raw medium shrimp, peeled and deveined
Directions

1Have ready a deep, 3-quart microwave-safe casserole.

2Put onion, oil and garlic in casserole.

3Cover with lid or vented plastic wrap.

4Microwave on High 3 to 5 minutes, until onion is crisp and tender.

5Stir in broth, turmeric, thyme, then rice. Cover and microwave on High 14 to 16 minutes, stirring twice, until rice is almost tender.

6Stir in ham, peas, pimiento and shrimp.

7Cover and microwave 2 to 4 minutes longer, until rice is tender and shrimp are almost opaque but still look slightly raw. Let stand, covered, for 5 minutes, until shrimp are completely opaque and cooked through.
