- 1 c. olive oil
- 1 chicken (2 lb.), cut up
- 1 large onion, chopped
- 1 clove garlic, chopped
- 1 green pepper, chopped
- 2 c. converted rice (Uncle Ben's)
- 1 tsp. saffron
- 1 c. frozen peas
- 1 lb. shrimp, shelled (raw)
- 12 mussels
- 1 c. red pimento
- 4 c. water
- 1 tsp. parsley
- salt to taste
Directions

1Heat olive oil and brown chicken pieces on all sides. Sprinkle chicken with salt and remove from pan.

2Add onion, garlic and green pepper.

3Saute until vegetables are tender.

4Add rice and saute until rice is golden.

5Add saffron, chicken and hot water.

6Cook about fifteen minutes.

7Add the shrimp, peas, mussels and pimento.

8Cook another fifteen minutes.

9After that, let it set in pan fifteen minutes before serving.
