- 1 tablespoon oil
- 1 large onion
- 14 teaspoon cinnamon
- 14 teaspoon cardamom
- 1 teaspoon fresh ginger, grated
- 2 garlic cloves, minced
- 12 cup tomatoes, chopped (about 1 medium)
- 1 tablespoon coriander
- 12 teaspoon garam masala
- 12 teaspoon paprika
- 12 teaspoon salt
- 1 (10 ounce) package frozen chopped spinach, thawed & undrained
- 1 (12 ounce) package extra firm tofu, drained & cubed
- 14 cup heavy cream
Directions

1Saute onion, cinnamon, cardamom, and ginger in 1 tablespoon oil until onion is soft.

2Then add garlic and chopped tomatoes, reduce heat and simmer for 2 minutes.

3Add coriander, garam masala, paprika, and salt, and spinach, cover and simmer on low heat for approximately 10 minutes.

4Add tofu cubes and simmer for another 20 minutes.

5Remove from heat, add cream, and stir until heated through.
