  • 8 to 10 pieces chicken
  • 1/2 c. flour
  • 1/2 c. pancake flour
  • 2 tsp. salt
  • 1/2 tsp. black pepper
  • 2 eggs
  • 1/2 c. milk
  • 1 1/2 c. shortening or oil

    Wash chicken and let drain. Mix eggs and milk in a bowl. Sift flour, pancake flour, pepper and salt in a dish. Dip chicken in egg and milk mixture, roll in flour mixture. Place in covered skillet and fry until brown, turning about every 15 minutes. (Skillet should be heated to 350°, be sure and fry until tender about 45 minutes). She used an electric skillet.
