Ricotta Gnocchi

  • 7/8 cup ricotta
  • 3 egg yolks
  • 1 5/8 cups flour
  • salt

    Mix the egg yolks and the ricotta.

    In a large bowl, mix the flour with salt, and dig a well in the center. Add the ricotta and mix until you get a smooth ball.

    Cut the dough into pieces and roll into sausage shapes, all the same size.

    Cut the sausages into chunks, all the same size.

    Roll each piece over the tines of a fork on one side, while pressing lightly with your thumb on the other side to make an indentation.

    Cook in a large pot of boiling salted water.

    When they rise to the surface, wait a few seconds, and drain.

    You can serve gnocchi with a little olive oil and grated parmesan, or with homemade tomato sauce (even better: a Provencal stew sauce).
