Ingredients
- 1 (2 to 2 1/2 to 3 1/2 lb.) frying chicken, cut into serving pieces
- 2 Tbsp. butter
- 2 Tbsp. olive oil
- 3 garlic cloves, crushed
- 2 sprigs fresh rosemary or 1 tsp. dried rosemary
- salt and pepper to taste
- 1/2 c. dry white wine
Directions

1Wash and dry chicken thoroughly.

2Melt butter with oil in large skillet.

3When butter foams, add chicken pieces, garlic and rosemary.

4Brown chicken on all sides over medium heat.

5Season with salt and pepper.

6Add wine.

7When wine is reduced by half, partially cover skillet.

8Cook over medium heat 30 to 40 minutes or until chicken is tender.

9Place chicken on warm platter.

10If sauce looks dry, stir in a little more wine.

11If sauce is too thin, increase heat and boil, uncovered, until it reaches desired thickness.

12Remove most of fat from sauce.

13Taste and adjust sauce for seasoning, then spoon over chicken.

14Serve immediately.
