- 1/3 c. nonfat dry milk powder
- 2 Tbsp. plus 1 1/2 tsp. enriched flour
- 1/4 tsp. ground cinnamon
- 1/8 tsp. salt
- 1 Tbsp. margarine, melted
- 2 eggs, separated
- 2 tsp. sugar
Directions

1Sift together dry milk, flour, cinnamon and salt.

2Set aside. Combine margarine and egg yolks.

3In a medium bowl, beat egg whites with sugar until stiff.

4Lightly fold yolk mixture into whites, then gradually fold in sifted ingredients.

5Let stand 5 minutes.

6Heat nonstick skillet over medium heat.

7Drop batter, 1 tablespoon at a time, into skillet.

8Lightly spread with back of spoon to form pancakes.

9Cook until underside is browned; turn pancakes.

10Cook until underside is browned.

11Turn pancakes and cook 1 minute longer.

12Serve hot.
