- 2 papayas mediums, peeled, seeded, halved & chopped
- 3 tablespoons butter
- 2 tablespoons dark brown sugar
- 2 tablespoons brandy
- 6 butter cookies
- 8 egg yolks
- 6 eggs
- 2 1/2 cups milk
- 1/2 cup sugar
Directions

1Preheat oven to 350 degrees (F).

2In a skillet, melt the butter and add the chopped papaya.

3Sprinkle with brown sugar and brandy.

4Saute until the papaya is very soft.

5Remove from heat and cool.

6Place in the container of a blender and puree.

7Crumble the butter cookies and stir into the papaya mixture.

8Spoon into the bottom of a 8 inch square baking pan.

9In a medium-sized bowl, beat the egg yolks and whole eggs until slightly thickened.
