Paprika Potatoes

  • 2 Tbsp. olive oil
  • 1 medium onion, chopped
  • 1 medium green pepper, chopped
  • 4 to 6 potatoes, peeled and diced
  • 2 tsp. paprika
  • 1 tomato, seeded and diced
  • salt and pepper to taste

Directions

    Heat the oil in a saucepan and saute the onion and green pepper for about 3 minutes.

    Add the potatoes and saute for about five minutes.

    Add paprika and stir to coat the potatoes.
  4. 4
    Add remaining ingredients and just enough water to barely cover. Reduce heat and cover.

    Cook 15 to 20 minutes until potatoes are tender and water is almost absorbed.

    Drain before serving if potatoes are tender and too much liquid remains.

    Makes 4 to 6 servings.
