- 2 Tbsp. olive oil
- 1 medium onion, chopped
- 1 medium green pepper, chopped
- 4 to 6 potatoes, peeled and diced
- 2 tsp. paprika
- 1 tomato, seeded and diced
- salt and pepper to taste
Directions

1Heat the oil in a saucepan and saute the onion and green pepper for about 3 minutes.

2Add the potatoes and saute for about five minutes.

3Add paprika and stir to coat the potatoes.

4Add remaining ingredients and just enough water to barely cover. Reduce heat and cover.

5Cook 15 to 20 minutes until potatoes are tender and water is almost absorbed.

6Drain before serving if potatoes are tender and too much liquid remains.

7Makes 4 to 6 servings.
