- 3 large bell peppers
- 1 medium yellow onion
- 2 Tbsp. olive oil
- 2 Tbsp. balsamic vinegar
- 1 tsp. sugar
- salt and pepper to taste
Directions

1Quarter, seed and derib peppers.

2Using a sharp knife or food processor, slice the peppers very very thinly.

3Peel and quarter the onion and slice very thinly.

4Set aside.

5Mix olive oil, vinegar, sugar, salt and pepper.

6Toss with vegetables.

7Cover and refrigerate at least 2 hours before serving.
