  • 1 (9-inch) pastry shell, baked
  • 1 envelope unflavored gelatin
  • 1/2 c. grapefruit juice (red)
  • 2 Tbsp. sugar
  • 1/2 c. whipped heavy cream
  • 1 c. red grapefruit sections
  • 2 c. red grapefruit sections, cut in pieces
  • 1 pt. vanilla ice cream, melted
  • 2 egg whites
  • 1 c. pecan pieces

    Prepare pastry shell.

    In saucepan, mix gelatin with grapefruit juice.

    Let stand 1 minute.

    Stir over low heat until gelatin is completely dissolved; remove from heat.

    Stir in ice cream; chill, stirring occasionally until mixture is consistency of unbeaten egg whites.

    Beat egg whites until peaks form; slowly add sugar and beat until stiff.

    Pour in gelatin mixture, grapefruit sections and pecans.

    Pour into shell.

    Garnish with grapefruit, pecans and whipped cream.
