- 2 tsp. each: olive oil and fresh lemon juice
- 1 scrod or flounder fillet (7 oz.), cut in half
- 1/2 oz. Parmesan cheese
Directions

1Preheat broiler.

2In cup, combine oil and lemon juice.

3On nonstick baking sheet, arrange fillets in a single layer and, using a pastry brush, brush both sides of each fillet with 1/4 of oil mixture.

4Sprinkle half of the cheese on each fillet.

5Broil until golden brown and fish flakes easily with fork, approximately 3 to 4 minutes.

6Serves 2.
