Parmesan Garlic Smashed Potatoes

  • 4 Potatoes, (I Used Both Yukon Gold And Purple)
  • 1 Tablespoon Olive Oil
  • 3 cloves Garlic, Minced
  • 1/2 cups Parmesan Cheese, Shredded

Directions

    Preheat oven to 450 F. Put potatoes onto a baking sheet. Bake potatoes until cooked through (about 35 minutes).

    Remove the pan from the oven. With a potato masher, smash potatoes down almost flat. Evenly top each potato with a dash of olive oil, garlic, and Parmesan.

    Bake another 20 minutes until golden and crispy. Enjoy!
