- 2 tablespoons olive oil
- 1 small onion, chopped finely
- 2 garlic cloves, minced
- 28 ounces chicken broth
- 2 cups orzo pasta
- 34 cup parmesan cheese
- salt and pepper
- 2 tablespoons parsley, chopped
Directions

1Saute onion in olive oil 3-4 min, add garlic and saute another minute or so until onion is soft and begining to turn golden.

2Add broth and bring to a boil, stir in orzo, reduce to a simmer and cover with lid.

3Cook while stirring occasionally for approximately 15 min or until liquid is gone and pasta is tender.

4Remove lid, add cheese, parsley, and salt and pepper to taste.
