Parmesan Potatoes

  • 4 to 6 baking potatoes
  • 1/4 c. olive oil
  • salt and pepper
  • 1/2 tsp. crushed red pepper
  • 1/2 c. grated Parmesan cheese
  • 1/2 tsp. chopped basil

Directions

    Cut each potato lengthwise into eighths.

    Put next 4 ingredients into plastic bag.

    Add potatoes and shake well. Arrange coated potatoes on shallow pan.

    Bake at 375° until tender inside and crusty outside, about 1 hour.

    Sprinkle with Parmesan and basil.
