  • Peanut oil for deep frying
  • 3 large egg whites
  • 1 cup freshly grated Parmesan cheese
  • 1/4 teaspoon cayenne pepper

    In a Dutch oven, heat 2 inches of oil to 375 degrees.

    Beat the egg whites until stiff peaks form, then fold in Parmesan and cayenne with a rubber spatula.

    In batches, drop small teaspoonsful of the mixture into the hot oil and fry until lightly browned -- about 2 minutes -- turning puffs as necessary.

    Drain puffs on wire rack, sprinkle with more cheese if desired and serve immediately, accompanied by tartar sauce.
