- Peanut oil for deep frying
- 3 large egg whites
- 1 cup freshly grated Parmesan cheese
- 1/4 teaspoon cayenne pepper
Directions

1In a Dutch oven, heat 2 inches of oil to 375 degrees.

2Beat the egg whites until stiff peaks form, then fold in Parmesan and cayenne with a rubber spatula.

3In batches, drop small teaspoonsful of the mixture into the hot oil and fry until lightly browned -- about 2 minutes -- turning puffs as necessary.

4Drain puffs on wire rack, sprinkle with more cheese if desired and serve immediately, accompanied by tartar sauce.
