Ingredients

  • 1 12 cups rice
  • 12 cup chopped onion
  • 14 cup butter or 14 cup oil
  • 3 cups boiling water
  • 1 cup white wine
  • 3 tomatoes, chopped
  • 1 12 teaspoons salt
  • 1 dash pepper
  • 34 cup grated parmesan cheese
  • 1 cup pitted black olives

Directions

    Brown rice and onions in butter or oil.

    Add 3 cups boiling water.

    Cover.

    Cook until rice is nearly done.

    Add 1 cup white wine, 3 tomatoes, chopped, 1 1/2 t. salt, dash pepper.

    Cook 12 minutes.

    Stir in 3/4 cup grated Parmesan and 1 cup pitted black olives, sliced.

    Heat thoroughly and serve.
