Parmesan Rice Frittata

- 2 cups cooked long-grain white rice
- 1/2 cup KRAFT Shredded Cheddar Cheese
- 2 Tbsp. KRAFT Grated Parmesan Cheese
- 2 eggs
- 1 Tbsp. oil
- 1/4 cup chopped red pepper
- 1 Tbsp. finely chopped fresh parsley (optional)
Directions

1Mix first 4 ingredients until blended.

2Heat oil in medium skillet on medium heat.

3Add rice mixture, pressing evenly to cover bottom of skillet.

4Cook 5 min.

5or until golden brown.

6Slide spatula underneath rice; tip skillet to loosen and gently slide onto plate.

7Invert skillet over rice on plate; using plate, flip over to cook other side.

8Cook 5 min.

9or until golden brown.

10Place on serving plate; top with peppers and parsley.

11Cut into wedges to serve.
