Parmesan Vegetable Toss

Ingredients

  • 4 c. fresh broccoli flowerets
  • 4 c. fresh cauliflowerets
  • 1 large, sweet onion, thinly sliced
  • 1/4 c. sugar
  • 1/3 c. grated Parmesan cheese
  • 1/2 tsp. salt
  • 1/2 tsp. basil leaves
  • 2 c. mayonnaise
  • 1 lb. bacon, crisp and crumbled
  • 1 large head lettuce, cut in bite size pieces
  • 2 c. seasoned croutons
  • 8 oz. can water chestnuts, drained

    In a large bowl, break broccoli and cauliflower into bite size pieces.

    Combine with onion.

    In small bowl, combine sugar, cheese, salt, basil and mayonnaise.

    Mix well.

    Toss veggies and dressing.

    Refrigerate several hours or overnight.

    Just before serving, add bacon, lettuce, croutons and water chestnuts.
