Parmesan Zucchini

  • 2 to 3 medium zucchini squash
  • 1 Tbsp. chicken bouillon (instant)
  • 3 Tbsp. instant minced onion
  • 1/2 c. sliced celery
  • 1 tsp. Italian seasoning (or to taste)
  • 1/3 to 1/2 c. tomato puree

Directions

    Wash and slice squash.

    Put in medium sized saucepan and add bouillon, minced onion, celery, tomato puree and more salt and some pepper if needed to taste.

    Put on to cook, covered, over low heat, being careful to check to see that the moisture is enough. A very little water may be added.

    When it begins to tender, add the Italian seasoning; pour into casserole and set in medium oven. Allow to bake for 40 minutes to an hour.

    When ready to serve, serve with Parmesan cheese grated over top.

    This has a definite pizza like flavor.
