- 24 vanilla wafers
- 2 (8 oz.) pkg. cream cheese, softened
- 3/4 c. sugar
- 1 can cherry pie filling
- 1 Tbsp. lemon juice
- 1 tsp. vanilla
- 2 eggs
Directions

1Place paper liners in 24 muffin tins.

2Put 1 vanilla wafer in bottom of each.

3Combine cream cheese, sugar, eggs, lemon juice and vanilla.

4Beat until smooth and creamy.

5Pour enough filling into muffin liners to fill each about 2/3 full.

6Bake at 350° for 15 to 20 minutes.

7Cool thoroughly or refrigerate overnight.

8Just before serving, spoon cherry pie filling on top of each cheesecake.

9I like to use the very small muffin cups; these make bite size cheesecakes and also more servings.

10Serves 24 people.
