  • 8 to 10 medium size potatoes
  • 1 (8 oz.) pkg. cream cheese
  • 1 (8 oz.) carton sour cream
  • salt and pepper to taste
  • 4 Tbsp. butter
  • 1/3 c. chopped chives
  • paprika to taste

Directions

    Boil peeled potatoes until tender.

    Beat sour cream and cheese together; add hot potatoes and beat until smooth.

    Add butter, chives and salt and pepper to taste.

    Pour into a well greased 2 quart casserole; dot with butter and sprinkle paprika on top. Bake at 350° for 25 minutes.

    Serves 8 to 10.

    Wonderful do-ahead dish for company.

    Can be cooked ahead and reheated or made and stored in refrigerator and cooked just before serving.
