  • 8-10 medium potatoes
  • 8 oz. pkg. cream cheese
  • 4 oz. carton sour cream
  • Salt and pepper to taste
  • 2 Tbsp. butter
  • Touch of paprika
  • Chives

Directions

    Peel and slice potatoes.

    Boil until tender and drain. Beat softened cream cheese and sour cream at medium speed until well blended.

    Add hot potatoes gradually, beating until light and fluffy.

    Season to taste with salt and pepper.

    Add chives and toss carefully.

    Put in a 2 quart greased casserole.

    Dot with butter and sprinkle with paprika.
