- Vegetable oil
- 2 teaspoons matzo meal, divided
- 2 egg whites
- 1/2 cup sugar
- 1 cup blanched almonds, finely ground
Directions

1Grease cookie sheet with oil; sprinkle with 1 teaspoon matzo meal. Set aside.

2Beat egg whites (at room temperature) in a medium mixing bowl until foamy. Gradually add sugar, beating until stiff peaks form. Fold in almonds and remaining matzo meal.

3Drop mixture by teaspoonfuls 1 inch apart onto prepared cookie sheet. Bake at 300° for 20 minutes or until lightly browned. Remove from cookie sheet, and cool on a wire rack.
