  • 6 cups cheese tortellini, cooked
  • 1 large pimiento, pepper from jar, diced
  • 4 green onions, chopped
  • 3 cups broccoli, steamed
  • 2 cups jicama, diced
  • 2 cups cherry tomatoes, cut in half
  • 2 cups mozzarella cheese
  • 1 cup sour cream
  • 13 cup parsley, coarsely chopped
  • 1 teaspoon black pepper

    After cooking the cheese tortellini and steaming the broccoli, let cool (You can put the broccoli in ice water to cool completely immediately).

    Put the first six ingredients in a large bowl and toss.

    In a smaller bowl mix the remaining ingredients together.

    Add it to the larger bowl with the other ingredients, and mix well.
