- 1 lb. ziti
- 2 medium zucchini (strips)
- 2 red peppers (strips)
- 2 c. sliced mushrooms
- 1 c. chopped scallions
- 1/3 c. butter
- 2 c. chopped tomato
- 1/2 c. flour
- 2 c. milk
- 2 c. chicken broth
- 1/2 tsp. nutmeg plus pepper
- 20 oz. chopped spinach
- 2 c. grated Cheddar cheese
Directions

1Cook pasta.

2Put in casserole dish.

3Saute zucchini, red peppers, mushrooms and scallions in butter.

4Add tomato.

5Spoon over pasta.

6Add 1/2 flour to drippings in pan.

7Blend in milk. Add broth, nutmeg and pepper.

8Cook until thick.

9Add spinach and cheese.
-
10Pour over pasta and vegetables.

11Cover and bake at 350° for 40 to 45 minutes.
