  • 8 oz. fettuccine or medium noodles
  • 2 Tbsp. canola oil
  • 1/2 c. chopped onion
  • 1 clove garlic, minced
  • 1/2 c. sliced celery
  • 2 c. broccoli flowerets
  • 1 c. sliced mushrooms
  • 1 red bell pepper, sliced
  • 1 c. fresh or frozen snow peas, thawed
  • 1 tsp. Italian seasoning
  • salt and pepper to taste
  • 3/4 c. vegetable broth
  • 1/2 c. grated Parmesan cheese
